Summer Cocktail Dinner Series Shines the Limelight on Local Spirits
Vermont Business Magazine – This summer the Red Clover Inn & Restaurant in the heart of the Killington Valley will host “Meet the Maker” cocktail dinners presented in partnership with three Vermont distillers. June 25 is set aside for Caledonia Spirits/Barr Hill, July 30 features Silo Distillery, and August 27 shines the spotlight on Mad River Distillers. The producers will be on hand to talk with diners about their work, process, and ethics.
This month Caledonia Spirits Sales Manager Hallie Picard will present three gin and vodka cocktails “landcrafted in the heart of Vermont” and distilled from organic juniper berries and raw honey: the Amalfi Coast, Pomegranate Martini, and Vermont Fields.
Barr Hill Gin, Limoncello, fresh lemon juice, and prosecco make up the Amalfi Coast, served with Katama Bay oysters. Duck confit salad and the Pomegranate Martini with Barr Hill Vodka, triple sec, fresh lemon juice, and pomegranate puree follows. Then veal short ribs accompany the Vermont Fields, made with Barr Hill Tom Cat, mixed with raw Vermont honey, ginger syrup, and fresh grapefruit. Dinner finishes with white chocolate mousse with strawberry coulis and cacao nibs.
“Vermont-made spirits are among the best in the world. Mixing them into cocktails and marrying them with Red Clover’s specially developed pairing menu of locally-sourced cuisine is a match made in heaven. This kind of quality right in our backyard gives us the opportunity to create an unforgettable dining experience,” notes Wine & Beverage Director Thomas Meek.

Served community-style on shared tables, each cocktail dinner features four one-night-only courses with three paired cocktails. Dinner starts at 5:30 pm and the cost per person is $55 plus tax and gratuity.
